Vegetable Tamales

I've always wanted to make my own tamales so since I have some time off I decided why not?  Tamales are made with corn meal (masa), water, evoo, sauteed veggies, and Mexican seasoning.  Masa is normally made with lard shortening, and chicken brought.  I substituted with water, extra virgin olive oil and spices.   Would have been delicious with sour cream and salsa, but not this time. A little time and preparation cans turn any meal into a veggie meal. Especially if yo can't get use to eating the same dull boring food.

Homemade Barley Soup


This is the first time I made Barley soup. It actually taste like the one I had at Stockton College about 8 years ago.  Some taste you just never forget.  Half of bag of barley, regular mushrooms, portabella mushrooms, carrots, onions, parsley, and a little sum sum to make it extra special. Not bad for a first time I must say.

Hospital Food

Hospitals do there best I think, but the food could be a lot better. There are just certain things that can cheer a person up when they're down. Cheerful hospital staff, clean fresh private room, nice outside view, and of course GOOD FOOD!!!! This is for those that are in between stages and have an appetite. Make the presentation and taste of the food outstanding. Here is my one and only dinner during my 3 day stay in the hospital. They tried but could use some work. After a liquid diet I had no choice but to eat my dinner.
